Walking Taco

1 1/2 lb. ground beef
1 small onion, chopped
1 tsp. garlic salt
salt and pepper to taste
10 bags (2.75 oz) Doritos cheese tortilla chips (snack/single serving size)
2 C. Lettuce, shredded
1 C. Tomatoes, chopped
1 C. Cheddar Cheese, shredded
1 C. Sour Cream
Taco Sauce to taste

In skillet, brown ground beef with onion, garlic salt, salt and pepper. Cut 1/4 inch off the top of chip bags. Crush chips slightly. Divide cooked hamburger mixture among the bags, and fill each one. Top with desired toppings. Stick fork in bag and serve. 10 servings.

Sloppy Joes for a crowd

3 lbs ground beef
1 tsp salt
1 cup chopped onion
1 cup ketchup
1 can tomato soup (10 3/4 oz)
2 TBSP vinegar
2 TBSP Worcestershire Sauce
2 TBSP packed brown sugar
12 hamburger buns

In a large skillet brown ground beef. Drain fat. Sprinkle with salt. Add chopped onion and cook until tender. Stir in ketchup, tomato soup, vinegar, worcestershire sauce and brown sugar. Simmer for about 30 minutes. This freezes well. If you do have a crowd to feed - spoon into hamburger buns and serve. Makes 12 servings.

My Sheppard's Pie

1 Lb Hamburger
1/4 cup onions or onion powder
1 can tomato sauce 8 oz
1 can of veg of choice ( we use green beans or corn) or peas not canned
salt , pepper
1 tsp parsley

4 cups of mashed potatoes ( instant work great)
1 cup grated cheese

brown hamburger, with onions, add tomatoes sauce, veg and spices.
pour in a 9x13 pan put potatoes on top, then grated cheese. back in 350 till cheese melted or broil till cheese melted.
So, easy and my family askes for this every week.

Barbeque Meatloaf

2 lbs extra lean ground beef
1/2 cup bread crumbs
1/2 cup graham cracker crumbs
2/3 cup milk
1/4 cup onion chopped fine
2 eggs
1/2 tsp black pepper
Onion Soup Mix (1 pkg or 3 tbsp)

Sauce for topping:

1/4 cup brown sugar
1 tbsp dry mustard
1/2 cup ketchup
1 tbsp chili sauce

1 pan (8x8).

Mix first 8 ingredients together. Press into 8x8" tin foil pan.
Combine sauce for topping ingredients.
This can be frozen at this point. Just cover the pan with foil. Put in freezer bag...label bake at 350'F for 1 hour uncovered. Cover the meatloaf with foil if top becomes overly brown while baking.
