3/4 cup finely chopped onion
1 1/2 cups chopped celery
1 cup butter
1 1/2 tsp salt
1 1/2 tsp dried sage leaves
1 tsp dried thyme leaves
1/2 tsp pepper
9 cups soft whole wheat bread crumbs
Cook and stir onion and celery in butter in a large skillet until onion is tender, add spices and take off heat. Place bread crumbs in a deep bowl, add ingredients from skillet; toss. Stuff turkey just before roasting. 9 cups stuffing.
*do not use honey wheat bread, it will make the stuffing sweet
