Homemade Noodles

What we use for homemade noodle soup:

2 1/3 cups flour
1/2 tsp salt
2 eggs (beaten)
1/3 cup water (warm)
1 tsp olive oil

Mix together 2 cups flour and salt. In another bowl mix eggs, water and olive oil. Stir egg mixture into flour all at oce, mixing until they are well combined. Sprinkle kneading surface with remaining 1/3 cup flour. Turn out dough and knead until smooth and elastic. Divide dough into pieces. Roll out dough to 1/16'' thinkness, dusting with flour as necessary. Cut into noodles.
