Swiss Bakes Chicken Breasts

2 whole chicken breasts
salt and pepper
8 fresh mushrooms
2 TBSP chopped fresh parsley
4 slices swiss cheese
4 slices mozzarella cheese

Preheat oven to 350. Bone and skin the breasts. You should now have 4 pieces skinless boneless chicken. Sprinkle the chicken pieces lightly with salt and pepper, and place in a shallow baking dish. Slice mushrooms over chicken, then sprinkle with parsley. Top each piece of chicken with a slice of swiss cheese, then mozzarella. Bake for 40-45 minutes.

You can omit the mushrooms and parsley and it's still yummy...I've also substituted asparagus with great results.
