2 pkg frozen unsweetened raspberries (600g)
1 1/4 cups sugar
4 cups boiling water
3 lemons
Put unthawed berries in saucepan, and add sugar. Cook over medium heat, stir occasionally for 20 minutes until all sugar is dissolved. Mash berries with potato masher. Pour the mixture through strainer. Extract all the juice. Toss pulp. Squeeze 2 lemons, strain juice, add it to the raspberry juice. Boil 4 cups of water and add it to the raspberry juice. Let the raspberry cordial cool. Then chill in fridge. When ready to serve garnish with lemon slices.
